Strawberry Matcha Tart
This festive and delicious strawberry matcha tart with it’s pastel pink and green color scheme just screams SPRING! You’ll love the delicate flavors and play of textures in each bite.
Laminating doughs is a bit of work but the visual effect is truly spectacular! For this tart I used strawberry and matcha powders as well as a fresh strawberry reduction to create a bright, delicately flavored dessert to wow your guests

Ingredients
Matcha Tart Shell
- 80 g confectioners sugar
- 3 egg yolks
- 1 tsp vanilla extract 5mL
- 1/2 lb all-purpose flour 225g
- 1/2 cup unsalted butter 113g cool & cubed
- ¼ tsp salt 1g
- 1 tsp matcha powder
Pink Tart Shell
- 80 g confectioners sugar
- 3 egg Yolks
- 1 tsp vanilla extract 5mL
- 1/2 lb plain flour 215g
- 1/2 cup unsalted butter 113g cool & cubed
- 2 tbsoq powdered strawberries
- ¼ tsp salt 1g
- 3 drops soft pink food coloring
- 2 tsp powdered strawberries optional
White Chocolate Ganache
- 1 cup White chocolate chips 200g
- 1/2 cup Heavy cream 110g heated
- 2 tsp powdered strawberries
Swiss Meringue Buttercream
- 2 egg whites at room temperature
- 1 cup unsalted butter 452g room temperature
- 3/4 cups granulated sugar 300g
- 1 pinch kosher salt
- 1 tsp vanilla extract 5mL
Strawberry Reduction
- 8 strawberries hulled and sliced
- 1 tbsp lemon juice 15mL
- 1/4 cup sugar
- 1 tbsp light corn syrup
Mascarpone Filling
- 8 oz mascarpone room temp
- 1/4 cup powdered sugar
- 1/4 cup strawberry reduction
For the Circles
- 1/2 cup white candy melts
- 2 tbsp powdered strawberries
- 2 tbsp matcha powder
Instructions
For the Tart Shell:
- You're making two batches of pastry, one matcha and one pink. Later on they will be laminated together.
For the Strawberry Dough:
- Add the icing sugar, butter, vanilla & salt in the bowl of a stand mixer. You can also use a hand mixer.
- Beat the mixture on a medium speed for 2 minutes until it forms a paste. Scrape down the bowl after 1 minute.
- Add in the egg yolks and mix until fully incorporated.
