Skinny Low Carb Peanut Butter Cheesecake

I think I shared with you a while back that my husband became a pastor this year in July. It’s been so much fun to be on this journey together! I’m proud that I get to say his sermon this past week really spoke to me.


Ingredients
crust ingredients:
1/4 cup butter melted
1 cup almond flour
1 tbsp Truvia
cheesecake ingredients:
8 oz 1/3 less fat cream cheese softened to room temperature
8 oz cream cheese softened to room temperature
1/2 cup Truvia
1 1/2 cups natural peanut butter
1 1/2 cups whipping cream
low fat whipped cream
chocolate shavings

Instructions

  • Combine melted butter, almond flour, and Truvia for crust. Press into a spring form pan and bake at 350 degrees for 10 minutes. Cool completely.
  • In a medium bowl, beat softened cream cheese, Truvia, and peanut butter until smooth. 
  • In a separate bowl, beat whipping cream on high speed until stiff peaks form.
