Eggless Orange Cupcakes with Whipped Cream Frosting and Orange Glaze
Cupcakes can have endless variations, though I don’t bake them very often, I love watching the colorful pictures of different flavoured cupcakes all over pinterest. One such picture which made me gaze for about 15 minutes was an orange flavoured cupcake by My Baking Addiction. The author of this blog Jamie has the best blog ever with some mind boggling pictures and being a dessert freak, I literally worship her blog. Anyway, the thing is that once I saw them, I had already decided in my mind that I have to make them, though mine were not as pretty as hers but yes, I came up with an eggless version as readers keep on insisting on it. These eggless orange cupcakes will for sure become your favourite and will make you orange-o-holic once you try them.

- All purpose flour - 1½ cups
- Granulated sugar - ¾ cup
- Vegetable Oil (anyne neutral flavoured oil) - ½ cup
- Yoghurt/curd - ¾ cup
- Baking powder - 1½ tsp
- Baking soda - ½ tsp
- Freshly squeezed orange juice - ½ cup
- Orange zest - 1 tsp
- Orange essence - 4 to 5 drops
- Liquid orange food colour - ½ tsp (optional)
For whipped cream frosting:
- Heavy sweetened whipping cream - ¾ cup (If not sweetened add ¼ cup powdered sugar)/ Use whipping cream powder to make frosting if you do not find whipping cream
For the orange glaze:
- Granulated sugar - ¼ cup
- Orange juice - ¼ cup
- Liquid orange food colour - few drops
Instructions
- Preheat oven at 180 degree celsius.
- Line cupcake mould with cupcake liners and keep aside.
- In a mixing bowl, add in sugar, oil, yoghurt, orange juice, orange zest, orange essence, food colour and beat the mixture with an electric whisk until well combined.
- Now sieve in the dry ingredients directly into the wet mixture, all purpose flour, baking powder and baking soda.
