Raw Nectarine Cake with Coconut (Vegan, GF, Paleo, Sugar Free, Nut Free)
Nectarines have red, yellow, or white flesh and are a source of vitamin A and C. They are commonly eaten fresh or cooked in conserves, jams, and pies.
It’s texture is perfect for raw desserts so I decided to make this refreshing, delicious and tart Raw Nectarine Cake with Coconut. It’s perfect for hot summer’s day when it doesn’t require to use the oven.
Ingredients for 24 cm cake model:
Base;
250 g dates
200 d desicated coconut
Filing;
– 5 nectarines
– juice of 1 small lemon
– 75 ml agava syrup
– 50 g desicated coconut
– 90 ml coconut oil
Preparation:
- For the base of the cake, mix soaked dates with a small amount of water until you get a smooth paste. Add desicated coconut and mix well (but not to smooth). Form the base in a cake model.
