Homemade Vanilla Pudding Without Cornstarch

My kids love vanilla pudding and we make it often. Most of the time we cheat and use the pre-packaged instant pudding mix that you buy at the store, but every now and then we make it from scratch. Honestly, I don’t know why we ever bother to buy the boxed stuff. You make my homemade vanilla pudding without cornstarch and there is no dry milk involved, either.

It just uses simple ingredients that you probably already have in your pantry and fridge. Flour, Sugar, Milk, Eggs, Butter, Salt and Vanilla. It’s so easy!



Ingredients:
1 1/2 cups milk
1/4 cup sugar
1/4 teaspoon salt
3 tablespoons flour
1 egg yolk
1 tablespoon butter
1/2 teaspoon vanilla
Directions:

  1. Pour 1 cup of milk into a small pot. Scald over medium-high heat.
  2. Combine sugar, salt, flour and 1/2 cup milk in a small bowl.
  3. Reduce heat to medium. Pour the flour mixture into the scalded milk. Stir constantly.
  4. Place egg yolk into a small bowl. Add 1/2 cup of the boiling cream mixture to the egg yolk, stir vigorously until combined. Pour back into the pot and continue to cook for 1 minute.
