BUMBLEBEE CUPCAKES

My daughter’s soccer team is the Bumblebees and I made these cupcakes to celebrate the end of a hard fought season.  They were really simple to make and turned out so cute- I thought some of you might also like an easy how-to so you can make them as well.

These are darling for Spring parties or baby showers and would be so perfect for a Winnie the Pooh themed birthday or baby shower.  I think they are bright and fun enough for a bake sale too.

To put these together is incredibly simple- just a chocolate cake base, a buttercream frosting and then adorable little bumblebee sugar toppers.

I will warn you these look best with a lot of a frosting so I doubled the frosting recipe to have enough. In reality of eating the cupcakes you probably want to scrape a little bit off for a more even cake to frosting ratio but for the presentation, a generous hive looks best 🙂


Here goes:

I started with basic white cupcake liners and used a box cupcake mix in chocolate flavor.  I don’t mind the flavor of a box cupcake mix but for the frosting I always prefer homemade.

Even though the frosting is yellow, I used this basic buttercream frosting recipe with vanilla flavoring not lemon.  I didn’t think the lemon would be as good with chocolate cake.  If you want to make this a Spring theme, a vanilla cupcake base and lemon added to the frosting mix would be wonderful.

Once you have the cupcakes baked and cooled and the frosting made add a few drops of yellow food coloring.  I used the lemon yellow from the Wilton set here. 

Pour it all into a large piping bag or Ziploc storage bag. Cut the tip of the bag about 1 inch up.  I could not find an actual piping tip large enough to create the beehive.  Try cutting the tip about 1 inch or so up so you get large swirls on your cupcake.  You can test the size by squeezing a small amount onto parchment paper.  Cut higher if it doesn’t appear to be creating swirls that are large enough.

Once the size looks good, simply swirl the frosting around the cupcake to create a beehive.  I found it difficult to do this without holding the cupcake in hand to keep it steady.

Once the swirls were all done, I popped these cute little sugar Bumblebees on top.  Mine were actually made by Williams Sonoma but I am not seeing them available anymore so the Wilton is very similar.

And that is it! I think these turned out so cute and the bright color just looks fantastic.
