MOCHA CUPCAKES WITH IRISH CREAM FROSTING
You’ll cause a stir when you bring these Mocha Cupcakes with Irish Cream Frosting to your next office party! This time-saving recipe takes minutes to create but tastes so delicious your co-workers will swear you never sleep.
If you do not have an icing bag you can make one using a quart-sized plastic bag. Simply add about half of the icing to the bag and twist the top so that the icing within the bag becomes taut. Snip off a small corner of the bag and slowly pipe icing onto your now cooled cupcakes. Repeat with a separate bag for the second half of your icing. Enjoy!

- 1 box of chocolate cake mix
- 1/4 cup instant coffee
- 4 sticks of unsalted butter
- 4 Tablespoons Irish Cream Liqueur (I use Bailey’s)
- 1 box of powdered sugar (4 cups)
INSTRUCTIONS
- Follow all instructions on the box of cake mix for making cupcakes, and mix in the instant coffee to give them a mocha flavor.
- While the cupcakes are cooking, cream the softened butter with an electric mixer until the color is light.
- Slowly blend in the liqueur and once well blended, very slowly add in sugar until the mixture becomes creamy.
