PIZZA MEATBALLS

Since changing my mindset on food and living the Paleo lifestyle, I have come to realize that I can still enjoy a fun Friday night meal in a much healthier way. Pizza is one of those comfort foods that I crave on a regular basis, but instead of indulging in a greasy slice of pizza, I decided to create an easy, flavorful and delicious pizza meatball recipe.  Not only are these heavenly, but they are also Whole30, Keto and Paleo complaint along with being gluten and dairy free.



INGREDIENTS
Paleo Meatballs

  • 2 pound ground beef
  • 1  tsp garlic powder
  • 3 tbsp chopped sweet onions
  • 1/2 tsp Pink salt if desired, add another 1/2 tsp
  • 1 tsp black cracked pepper
  • 1/2 tsp onion powder
  • 1 tbsp oregano
  • 2 1/2 tbsp tapioca flour
  • 1 large egg
  • 1/2 cup OPTIONAL: chopped compliant pepperonis omit all together for Whole30 compliant
  • 1 1/4 cup compliant pizza sauce or see my recipe below
  • Compliant Pizza Sauce (Makes 1 1/2 Cup)
  • 1 15 oz can tomato sauce
  • 1 6 oz can tomato paste
  • 1/2 tsp Pink salt
  • 1/4  tsp  cracked black pepper
  • 1  tsp  dried oregano
  • 1/2 tsp dried basil
  • 1  tsp  Italian seasoning
  • 2 tbsp water
  • 1/2 tsp onion powder
  • 1/2  tsp  garlic powder


INSTRUCTIONS
Paleo Meatballs

  1. Preheat the oven to 400° and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine hamburger meat egg, onions, seasoning, salt, pepperonis, pizza sauce and tapioca flour. Mix until everything is completely combined.
  3. Use a cookie scoop or a big spoon to scoop the meat. Shape each meatball (1 1/2 inch)
