After some vacation time with my family and friends, I was so looking forward to get back into blogging and recipe making. We spent 2 weeks in Utah, visiting family. We also hiked and hiked on trails…and more trails. It was fun but exhausting! Did I mention i’m pregnant….? So exhausting but such a fun change of scenery and gorgeous views. Nevertheless, it’s crazy how after 2 weeks, I missed blogging and keeping up-to-date with the Mommy Lair food blog!
I’m finally coming back to the normal routine and blogging again. Blogging about something we love doing over here: baking! Our family absolutely loves baking around here and biscuits are a family favorite.

Ingredients
- 1/2 cup rice milk
- 2 cups White flour
- 1/2 cup vegetable shortening
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp raw honey (optional)
Instructions
- Preheat the oven to 400 degrees.
- You will need a large mixing bowl and a mixer or a fork for mixing-Mix all of the ingredients together in any order.
- Take a rolling pin and roll out the dough to 1 inch-1 1/2 inches thick. Use and sprinkle on additional flour onto the dough to prevent stickiness when rolling.
- Cut out the biscuit with a good-quality sharp cookie cutter. You can make this step fun for kids by using different cookie cutter shapes, rather than just the traditional circular biscuit shape. In addition, the thicker you roll it out the dough, the taller the biscuit will become after baking.
