CRUMBLY ENERGY POWER MUNCHKINS

You know the feeling when you go to the supermarket, and you really want a healthy snack but every time you grab a box from the grocery-store shelf, you look at the ingredients on the snack box, and they all include sugar and/or sodium? Well, now that you found this crumbly energy power munchkins recipe you don’t have to worry about that! It’s healthy, it’s delicious. it’s gluten free and it’s kid-approved!

I love snacks. Sometimes I NEED snacks but I don’t want to eat something that will not get my body any nutrients or worse, promote chronic illness.


I’m not going to lie, stores may not have the healthy snacks we are wanting to fill our kid’s bellies with but that doesn’t mean we can’t have good, healthy snacks.

Ingredients

  • 1/3 cup coconut flour
  • 2 tbsp + 1 tsp honey
  • 1/3 cup all-natural organic peanut butter
  • 1/3 cup + 1 tbsp raw oats
  • 1 tsp olive oil
  • 4 tbsp rice milk(or other milk of your choice)
  • 2 tbsp crushed walnuts
  • 2 tbsp pre-ground flaxseed
  • 1-2 tbsp plain organic raisins(optional)

Instructions

  1. Preheat the oven to 350 degrees.
  2. Mix all of the ingredients together in any order in a large bowl.  Add the optional raisins into the mix(if you're a raisin kind of person).
  3. Form the dough you create into rounded balls and place on a greased baking sheet.
