Pumpkin Spice Keto Mug Cake

Ingredients

  • 2 tbsp butter
  • 1 tbsp coconut flour
  • 2 tbsp almond meal or golden flax meal
  • 1/4 tsp baking powder
  • 2 tsp granular monk fruit erythritol or low carb sweetener of choice
  • 2 tsp pumpkin spice see recipe notes for substitutes
  • 1 egg
  • 1 tbsp heavy cream


Instructions

  1. Place the butter in a microwave safe mug or ramekin (1 cup capacity) and melt in the microwave (20-30 seconds on high)
  2. Add in all other ingredients (except cream) and whisk then mix well
  3. Cook in the microwave for 50-60 seconds on high.
