For the crust:
- 1 cup graham cracker crumbs
- 2 tablespoons granulated sugar
- 1/4 cup melted butter
For the cheesecake:
- 16 ounces (500g) cream cheese, softened
- 1/4 cup plain Greek yogurt or sour cream
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoon vanilla
For the topping:
- 2 1/2 cups (about 1 pound) pitted sweet cherries, quartered
- 1 tablespoon lemon juice
- 1 1/2 tablespoons corn starch
- 1/2 cup granulated sugar
Instructions
- Preheat the oven to 325 degrees F.
- Line an 8x8 inch baking pan with aluminum foil, leaving an overhang, and lightly spray it with non-stick cooking spray.
- In a small bowl, stir together the graham cracker crumbs, sugar and melted butter for the crust until well combined.
