CREAM CHEESE CARROT BUNDT CAKE

Cream Cheese Carrot Bundt Cake - only a few simple ingredients make this delicious cake. Cake with a can of frosting in the batter. Carrot cake mix, water, oil, eggs, a can of coconut pecan frosting, cream cheese and sugar. I couldn't believe how delicious this cake tasted. Can make a few days in advance and store in an air-tight container. Great for holidays and potlucks!



INGREDIENTS:

  • 1 box Carrot Cake mix
  • 1 cup water
  • 1 cup vegetable oil
  • 4 eggs
  • 1 (16-oz) can Coconut Pecan frosting
  • 1 (8-oz) package cream cheese, softened
  • 1/3 cup sugar
  • 1 tsp vanilla extract
  • 1 large egg

INSTRUCTIONS:

  1. Preheat oven to 350ºF. Grease a BUNDT PAN with cooking spray and set aside.
  2. Combine cake mix, water, oil, eggs, and frosting in a large mixing bowl. Beat with a HANDHELD MIXER until smooth.
  3. For the cream cheese filling, beat cream cheese with sugar, vanilla, and egg with a HANDHELD MIXER until smooth. Set aside.
