Surprise Inside Mini Easter Bundt Cakes
I’d be willing to argue that Easter is ALMOST as good as Halloween when it comes to candy. Jelly beans and cream filled chocolate eggs…and my favorite, malted chocolate Robin’s eggs. Ugh. Why are they so good? So today I’m sharing the easiest way to stuff all of that goodness inside of a cake and blame it on the Easter Bunny. Surprise Inside Mini Easter Bundt Cakes, oh yes.

Vanilla Glaze:

- 1 box white cake mix (or homemade), prepared as directed
- vanilla glaze
- gel food coloring
- mixed Easter candy
Vanilla Glaze:
- 2 cups confectioners sugar
- 2 tablespoons milk + more as needed
- 1 teaspoon lemon juice
- ½ teaspoon vanilla extract
INSTRUCTIONS
- Butter and flour a mini bundt cake pan and set aside. Note: the pan I used makes 6 medium sized bundt cakes.
- Prepare the cake mix and pour into cake pan. Bake as directed.
- Cool cakes and slice off a very small amount of the bottom (as little as possible) so that bundts can stand upright without wobbling.
