Pistachio White Chocolate Cupcakes
These are sweet pistachio cupcakes filled with melted white chocolate and frosted with the best pistachio cream cheese frosting ever. The frosting is something I could really just eat on it’s own. Give me a spoon and I’m good. This whole cupcake gives me nostalgia…pistachio pudding was my jam growing up, and still is. There is pistachio pudding mix in both the cupcake and the frosting. Because it’s delicious. And it makes this recipe pretty easy.

INGREDIENTS
- 1/4 cup vegetable oil
- 1/2 cup milk
- 1 large egg
- 2 tsp vanilla
- 1/2 cup all purpose flour
- 3/4 cup cake flour
- 1 3.4 oz box of pistachio pudding (half of it is used for these cupcakes, the other half is used in the frosting)
- 2 tsp baking powder
- 1 cup sugar
- 1/2 cup warm water

- 1 cup white chocolate chips
- 1/4 cup milk
INSTRUCTIONS

- Line your cupcake pan with cupcake liners.
- Preheat the oven to 350.
- In a mixing bowl, combine vegetable oil, milk, egg, and vanilla and beat together for 1 minute.
- In a separate bowl whisk together the flours, sugar, baking powder, and half a box of pistachio pudding (about 1/4 cup).
- Add the dry mix into the wet, and combine thoroughly.
