PEANUT BUTTER CHOCOLATE CUPCAKES

These peanut butter chocolate cupcakes are easy to make and crazy good. With a quick one bowl chocolate cupcake recipe from scratch and the BEST peanut butter frosting recipe on top. These will be sure to become a family favorite!

I really don’t think there is any better combination out there then peanut butter and chocolate. I don’t know what it is. Sweet and salty. Dark, rich chocolate. The kid in me just can’t say no when this combination shows up in a dessert.


Ingredients
For The Cupcakes

  • 2 cups sugar
  • 1-3/4 cups all-purpose flour
  • 3/4 cup natural Cocoa not dutch process
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs room temperature
  • 1 cup milk room temperature
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the frosting (this is a double batch because I like a lot of frosting!)

  • 5 sticks unsalted butter (1 1/4 cups) softened to room temperature
  • 5 cups confectioners sugar
  • 4 Tablespoons heavy cream
  • 4 teaspoons vanilla extract
  • 2 cups peanut butter
  • Cupcake Pans
  • Wilton 2D Tip
  • Piping Bags
  • Whisk
  • Cupcake Liners

Instructions
To Make The Chocolate Cupcakes

  1. Heat oven to 350°F. Prepare your muffin pans with cupcake liners.
  2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl.  
  3. Add eggs, milk, oil, vanilla extract and whisk to combine. 
  4. In a measuring cup microwave 1 cup of water (or heat on stovetop). Add boiling water to batter. Stir to combine. (batter will be thin)
